Santo's Brunch

Santo’s New Mexican cuisine is a fun and unique addition to North Boulder. We really haven’t had anything like it! Chef Hosea Rosenberg (from Taos, New Mexico) also owns Blackbelly AND won Top Chef Season 5 (need we say more?!). We stopped in for brunch and it. was. DELICIOUS! 

Before we get started on the food, we wanted to talk about the fabulous ambiance. Their patio has sprawling mountain views with bunches of chili peppers (ristras) hanging from the awnings. Inside is bright and flooded with natural light with pops of red and blues throughout. We thought the decor set the PERFECT vibe for the New Mexican style theme of Santo. 

 

Blue corn atole pancakes

This was a table favorite for sure. The chef explained the process he uses to make his orange butter. Seriously, these pancakes stole the show. YUM! 

 

Smoked pork belly, eggs & grits

This dish was served in a bowl with a spoon. After slicing into the egg, there was really a great combo of flavors. The smoked pork was tender and flavorful. The red pepper jelly was something we’d never think to add, but ended up being the perfect touch!

The thick, tender pieces of pork belly, the hearty tomato, and the avocado combine for a truly farm fresh sandwich. The bread was light and airy but also very flavorful. 

 

Huevos diablos

Classic eggs in purgatory with a southwestern heat! Mildly spicy from the red chile and packed with flavor. Our favorite addition was the fresh asparagus. 

New Mexican Coffee

We loved that they had a coffee cocktail on their brunch menu. It was bold and bright with sweet, cinnamon whipped cream. You could taste the tequila but it blended nicely. 

Bloody Mary

This isn’t your average run-of-the-mill Mary mix. It’s made out of house roasted veggies and mixed with local Spring 44 vodka (Loveland, CO). We would venture to say it is one of the BEST Bloody Mary’s we’ve ever had! Pro tip: Make it hotter with diablo (house-made hot sauce)

This cocktail was more spirit forward. It was like a smokey grapefruit, and we could drink it anytime of day! It was refreshing and the perfect patio drink. 

 

Santo really brings something new and unique to the Boulder brunch scene. Whether you’re after mountain views, New Mexican style brunch dishes, or a fun brunch cocktail menu, Santo will not disappoint! Brunch runs 9:30-2:30pm Saturday & Sunday. Check it out and let us know what you think!
